Olive oil, the gold of Greece

Olive oil production

Extra virgin olive oil is taken from fresh and healthy olives. The olives are the fruits of olive tree, which have been cultivated in Crete for over five thousand years. Virgin olive oil is the only vegetable oil that is produced using a quite mild treatment, implicating only physical methods. This includes olive crushing, mixing, centrifugation and filtration.

The olive tree, exclusively “Koroneiki” variety, is cultivated in the region of Sitia. The mountainous terrain will not allow the use of machines, and the harvest process is solely physical by beating branches of trees and collecting the olives from the nets in vegetable fibre sacks.

The sacks are transported to the olive oil mill, where the leaves are removed and sent to washing, crushing and mixing. The pulp is then transferred to stainless steel tanks, where with the mechanical power of a steel mixer, it becomes a fine paste without the use of water or high temperatures. The temperature is kept below 28 degrees. By using low temperatures and no water at all we retain the phenols, aromatic compounds, color ingredients and vitamins, which would otherwise be lost.

The process

The process extracts the oil from the cells of the olive. Once the olive oil has been extracted from the pulp, we transfer it to the centrifugation where oil solids and other liquids are separated from the oil. Finally, the oil is put through a second separator for the rejection of any remaining secondary products and impurities. In the final phase the oil is stored in stainless steel tanks ready for a last analysis to determine oxidation level, such as peroxide, K indicator etc. The tanks are then plugged into the automatic production line for bottling, labeling and printing of data. The final quality check is taken from random bottles, before packing and palleting of bottles.

Organic Farming

Toplou Monastery uses no pesticides, chemical fertilizers or other artificial additives, and follows strict regulations and guidelines for organic farming. The processing supplementary devices and substances used are: Filter of diatomaceous earth, which is for retention, of remaining particles of olive pomace.

Toplou har been a pioneer securing high quality olive oil in the region, and have established a local agriculture union where they collaborate with selected farmers. They offer both conventional and organic extra virgin olive oil of high standards. Their facilities fully complies with the guidelines and regulations of the European Union, and the international food standards concerning quality, taste and laboratory analysis of olive oil.

The byproducts issued from the process (leaves, olive seed particles and liquid waste), which are very rich in micro-organisms and nitrogen end at the Compost production installation of the company. The compost we produce is a unique advantage for our company compared to similar olive oil production processing plants which usually release the non treated byproducts and thus pollute the environment.

Our goal is to expand the company’s facilities. In order to realize this project we plan new buildings construction of 1000 m2 where there will be new olive oil storage tanks, a chemical quality control laboratory and machinery repair warehouse as well as storage facilities. Our target is to build a strong company within a competitive international market, which will protect both consumers and farmers and will promote a high quality product in the market.
